Ingredients:
- 1 cup brown sugar
- 1 cup butter at room temperature
- 3 well beaten eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ cup milk
- 2 cups candied cherries
- 6 slices candied pineapple
- 7 cups pecans
- ¾ 15 oz box of raisins
Preheat oven to 300 degrees. Line 2 cookie sheets with parchment or grease cookie sheets.
Sift together flour, baking soda, and cinnamon in a bowl and set aside. Use some of the flour to mix with the fruit to keep from sticking together. Cream butter and sugar in a separate large bowl. Add eggs, then add milk and flour alternately, blending well. Fold the fruit and nuts into this mixture by hand, mixing well. Drop by tablespoons onto the prepared cookie sheets. Continue baking batches until you have finished. Cool cookies on rack. You can refrigerate mixture and finish baking the next day. if needed. You will probably like these cookies, even if you are not a fruitcake lover.
Bake 300 degrees for 20-30 minutes.
